There are three varieties of cornmeal: the traditional cornmeal, the mimoso cornmeal and semolina. The first is the corn flour obtained from the grinding of corn grain and has a medium thickness. The so-called "mimoso" is thinner, used mainly in the preparation of cakes and "polenta".
